[摘 要]:目的:重点检验了台湾风味香肠的质构和药残检测。包括蛋白质、脂肪、水分、亚硝酸钠的含量测定。呋喃类药物其代谢物对人体有致癌、致畸胎副作用。方法:本论文对台湾风味香肠的质构和药残检测的内容包括蛋白质、脂肪、水分、亚硝酸钠的含量测定,其方法分别为凯氏定氮法、索氏抽提法、直接干燥法、紫外可见分光光度法、直接滴定法。药残检测是采用竞争性ELASA法。结果:经检测,受检台湾风味香肠制品全通过了质量检测。结论:以下检测台湾风味香肠的质构和药残检测方法和原理是根据食品安全国家标准的检测原理和方法具有权威的检测依据。
