摘 要:茶氨酸是茶叶中特有的一种氨基酸,其含量直接影响到茶叶的品质。本文综述了目前茶氨酸的应用现状及提取方法,对液膜提取过程的研究现状和意义进行了阐述;建立了碳酸钠皂化P204/Aliquat336微乳液膜体系,并应用此体系提取茶氨酸;研究不同因素如外水相PH、P204浓度、茶氨酸初始浓度、乳水比对萃取率的影响,从而得到合适的萃取条件为:茶氨酸初始浓度为100mg/L、P204浓度为1.2mol/L、外水相值为3.5、乳水比为1:2。

ABSTRACT:Theanine is a peculiar amino acid in the tea. The content directly affect quality of tea. In this paper,we summarized extraction method and the application situation of theanine,expond the recent research and significance of the extraction process.The initial stage I need create a small liquid film system which sode saponnify P204, and the system is used to recover theanine.So we can study different elements which contain liquid’s PH, P204’s consistency , theanine’s initial stage consitency and the ratio of lactescent and liquid are how to effect extraction rate. Consequently, appropriate extractive conditions are contain those: 100mg/L as theanine initial concentration,1.2mol/L as P204 concentration, 3.5 as liquid’s PH,1:2 as the ratio of lactescent and liquid.

茶氨酸又叫N-乙基-γ-L-谷氨酰胺,它是构成茶叶自然品质的主要成分,在绿茶中占游离氨基酸总量的40%~60%,是茶叶中含量最多的氨基酸。自然界中存在的茶氨酸均为L型在药理上具有抗肿瘤、降血压、镇静安神等功效,还是饮、纯净水剂、化妆品保湿剂、戒烟药物等的重要添加剂;同时氨基酸在人体肝脏内会分解为乙胺,哈佛医学院布考斯基博士研究报告乙胺使外周血液γδ、T免疫细胞接触到乙胺,以促进抗病菌、病毒、真菌和寄生虫感染的化学物质的分泌,从而提高人的免疫力。
