精益生产在服务业中的应用研究（有案例）.doc

摘要:随着第三产业的快速发展,我国服务业的发展也有了显著的提高。但是，现阶段我国服务业仍存在着服务内容同质化、服务水平不高的问题，国内服务业与国际服务业领先者相比而言，尚未摆脱粗犷的发展模式。其中，国际餐饮业巨头对于精益生产的科学理论方法的运用已经相当成熟，精益生产的运用对于提高企业竞争力有着不可小视的作用，所以我国服务业需要依托精益生产理念提升自身服务意识，完善服务能力，最后实现客户与企业的双赢，促进现代服务业的又好又快发展。

　　　本文综合分析了精益生产在服务业的应用现状，并通过对精益生产思想在服务业主要是餐饮业中的运用研究,以旺角金阁为例，对该餐厅运用精益生产思想进行结构优化，主要包括：人员配置优化、人流和物流动线规划、生产作业标准化等的推动。从而，降低成本，提高效率以及顾客满意度。以此，促进精益生产思想在整个服务业的运用，提升我国服务业发展水平，提高国际竞争力。

ABSTRACT:With the rapid development of the third industry, the development of service industry in our country also has improved significantly. At the present stage, however, service industry in China still exists the situation of service content homogenization and service level inferior. Comparing with international service industry leader , the domestic service industry is difficult to get rid of the rough development model. International food and beverage industry giant is sufficient with the application of the scientific theory method of lean production, which plays a key role to sharp the force of competitiveness. So the catering enterprises in China needs the concepts of lean production to improve its own service consciousness ,Its service ability and finally realizes the win-win between customer and enterprise, promoting the sound and rapid development of modern service industry. 

　　　This paper comprehensively analysis the research status of lean production in the service industry, and through the application of the idea of lean production in the service sector. Taking the catering industry Wangjiao Golden Restaurant for example, I will use the idea of lean production to optimize the structure, mainly including: personnel allocation optimization, the flow and physical flow line planning, production standardization, etc. to reduce costs and improve efficiency and customer satisfaction, promoting the use of lean production idea in the whole service industry, enhancing the level of service industry development in our country and improve international competitiveness.

　　　　本论文以旺角金阁餐厅运营服务为研究对象，通过对精益生产，传统厨房,人流、物流动线规划等基本概念的介绍，详细研究了精益生产思想及其理论在餐厅服务中的灵活运行。从厨房这个餐饮大场所着眼，利用精益生产的基本理论在旺角金阁的厨房生产布局优化、人流物流动线规划设计、餐厅厨房生产经营标准化推动等方面进行充分的实施运用。对精益生产在在旺角金阁的实施效果进行评估，发现其取得了一定的效益。在此过程中主要做了如下工作并取得了良好的成果：1)结合精益生产基本理论，对旺角金阁运营状况进行分析，寻找并指出其中存在的主要问题。2)对旺角金阁餐厅的厨房布局和人员配置进行了分类研究，从中得出实施精益生产方案的构思，并进一步思考和探究如何在服务业主要包括餐饮业的实际改善中灵活运用精益生产的工具。3)对旺角金阁实施精益生产的效果进行评估，在顾客就餐等餐时间、食品的品质和质量和厨师的操作舒适度等方面都有一定的改善，并继续研究改善后仍然存在的问题以及今后仍然需要改进和努力的方向，对同类餐饮企业乃至整个服务业的生产运营服务具有很好的借鉴意义。

精益生产是一种以消除浪费、降低成本、提高效率为核心的基础理论。旺角金阁在生产运营服务方面实施精益生产，取得了很好的效果，生产服务系统有了一定的改善。但是，这只是一个良好的开始，精益生产在服务业运用的道路仍然很遥远且充满艰辛。在精益服务思想的指导下，每个精益生产实施的参与者必须结合实际，做到灵活运用，这样才能实现精益生产的效益，维护好已有的改善成果，并不断取得新的成绩。由于各方面条件的限制，本课题研究及旺角金阁餐厅精益生产方案的实施方面，还存在一些不足之处。尽管如此，我相信，在精益生产理论思想指导下，旺角金阁餐厅的服务水准会持续不断改善，并且一定能取得更大的效益。
